Zucchini Stuffed with Dried Beef

Ingredients

500g of Dried Beef;

2 large zucchini;

½ chopped onion;

150g of Catupiry-type cheese;

Olive oil for sautéing.

Preparation Method

  1. Cook the dried beef in a pressure cooker for about 20 minutes, let it cool slightly and shred it with a fork;
  2. Sauté the onion in a little olive oil;
  3. Add the cooked and shredded dried beef and sauté for a while.
  4. Then, turn off the heat, mix in the Catupiry cheese and set aside;
  5. Cut the zucchini into pieces (approx. 2 fingers thick) and remove some of the pulp with a spoon;
  6. In a greased container, place the zucchini and add the dried beef filling to each one.
  7. Bake in a preheated oven at 180°C (350°F) for approximately 10 minutes.
  8. Serve with rice.

Preparation time: 15 minutes.

Yield: 6 servings.
