Spinach Purée with Dried Beef and Bacon

Desalt the Dried Beef.

The day before, cut the dried beef into medium-sized pieces, place in a container with ice water until all the meat is covered. Refrigerate and change the water 3 to 4 times.

Time: 1 hour

Yield: 4 Servings

Ingredients

  • 1 bunch of spinach
  • 1 ½ cups of milk
  • 3 tablespoons of wheat flour
  • 2 tablespoons of butter
  • ½ can of heavy cream
  • 1 onion
  • 500g of shredded dried beef
  • 200g of bacon
  • Salt and nutmeg to taste.

Preparation:

Soak the spinach in a saucepan with 1/4 cup of water. Let it wilt. 

Drain in a colander and squeeze well to remove as much water as possible. Chop finely. 

In a saucepan, combine the flour dissolved in the milk and the butter. Season with salt and nutmeg.

Mix well until it forms a paste. Add the cream, being careful not to make it too runny.

Once the mashed potatoes are ready, sauté the onion and add the dried beef and set aside. Cut the bacon into small cubes and fry in olive oil.

Serve with white rice.

Suggestion: Place the bacon on top of the mashed potatoes.
